Bowls are all the rage, in case you hadn’t noticed. I love going to Chipotle and loading up a bowl with my favorite toppings.
I decided that creating bowl dinners at home for my bunch could be healthy, easy and easily repeatable.
As long as you have meat, veggies, rice or quinoa, and beans, you are ready to go. Those are great base ingredients, then you can get as creative as you’d like.
I love red onions mixed with chopped zucchini. The sweet onions with the zucchini crunch is delish after being sautéed in extra virgin olive oil.
Avocadoes cubed in a bowl add such a great texture and flavor. I was lucky to buy these while they were already ripe. Such a treat.
You can really use any dressing you’d like. I heated up for 30 seconds a bowl of this spicy asian vinaigrette and it was fabulous over our bowls. Highly recommend.
- White Jasmine Rice
- 3 chopped zucchinis
- 1 large red onion chopped
- 2 avocadoes chopped
- 2 cans black beans
- Line bottom of bowl with rice and layer toppings on, any way you'd like. So easy!
