I was feeling a little down this afternoon. Maybe saying the overwhelm has gotten to me is a better way to describe it.
I decided my body needed a boost. I remembered that there was a fresh pack of baby arugula in my fridge.
I tossed the greens with olive oil and vinegar, threw in some heirloom tomatoes, and voila – super yummy salad snack.
Sometimes super simple, three ingredient dishes are just what the doctor ordered.
Simple Baby Arugula Salad
- Baby arugula
- Mini heirloom tomatoes
- Olive oil and vinegar dressing
Toss ingredients together.
