My family is really enjoying eating more fish lately, so I'm trying to up my game on fish recipes.
We particularly enjoy Salmon and Cod. It's hard to go wrong with these two types of fish. I decided I need to increase my vault of healthy cod recipes which led me to this dish.
I've pan-seared cod and baked cod before, but never with a Meditteranean flair. Until now.
I love the spices included in this recipe and how they blend so well with the easy lemon sauce.
Ingredients Needed for this Baked Cod Recipe:
- Cod Fillets
- Minced Garlic
- Italian Parsley
- Fresh Lemon Juice
- Olive Oil
- Melted Butter
- All-purpose Flour
- Coriander
- Cumin
- Paprika
- Sea Salt
- Freshly ground pepper

You can also serve next to a fluffy side of jasmine rice or a homemade dinner roll.

Tips:
- If you have an oven-safe skillet, I recommend using it for this recipe as you will have less to clean up. Since purchasing our Scanpan oven-safe skillet over 2 years ago, we have enjoyed using it a LOT with dishes like this one.
- Do not skimp on the spices. Feel free to add larger amounts of the spices. They're mixed up with the flour for a good balance.
- Use Freshly squeezed lemon juice and freshly chopped parsley. It does make a difference.
- If you'd like, you could make this a baked cod with panko dish by replacing the flour with panko bread crumbs.

Baked Cod Recipe Greek Style
Easy and Healthy Oven Baked Cod Recipe, Greek Style. Cod is dipped in a lemon butter sauce, covered with a crispy bread coating, sauteed in an oven-safe skillet, then baked to perfection. So good!
Ingredients
- 1 ½ lb Cod fillet pieces
- 5 tsp minced garlic
- ¼ cup freshly chopped Italian parsley leaves
Lemon Sauce
- 5 tbsp lemon juice
- 5 tbsp olive oil
- 2 tbsp melted butter
Crispy Coating
- ⅓ cup all-purpose flour
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp sea salt
- ½ tsp freshly ground pepper
Instructions

Preheat oven to 400 degrees.

In a shallow wide bowl, mix lemon sauce ingredients including lemon juice, olive oil, and melted butter.

In a second shallow wide bowl, mix the coating ingredients including flour, spices, and salt and pepper.

Pat cod fillets dry with a paper towel. Dip the fillets in the lemon mixture, then in the flour mixture and set aside.

Turn large skillet onto medium-high and pour two tablespoons of olive oil into skillet swirling it around until skillet is covered in oil. Once oil is hot and sizzling, it is time to place the fillets in the skillet.

Place fillets in hot skillet and sear for about 2-3 minutes on each side of fillet. You want the fish to be browned, but not cooked all the way through. Remove from heat. Add minced garlic to remaining lemon sauce and drizzle over fillets.

Place your oven-safe skillet (or place your fillets in a baking dish) with the fillets in the oven and bake the fish for about 10 minutes, or until the fish flakes easily.

Sprinkle chopped parsley on top of cooked cod fillets. Enjoy!
Recipe Notes
Notes: An oven safe skillet is ideal for this recipe, however, you can easily transfer your pan seared cod to a 13x9 baking dish and then place the cod in the oven for baking.
