Best Potato Recipe Ever

Best potato recipe ever with smashed crispy gold potatoes sautéed in olive oil and topped with sea salt and shredded parmesan cheese. Such an easy 3 ingredient recipe to make one of the best comfort foods side dishes in the world. SO good!

Oh my goodness, these potatoes are out of this world delicious, hence the name of the post, Best Potato Recipe Ever.

I like finding unique potato recipes that bring a new twist to cooking this food staple, the potato. This recipe hits all the marks for me in taste, uniqueness, easy to make, and loved by the whole family.

Ingredients you will need:

  1. 3 pounds small new potatoes - I used small gold potatoes, but any variety of small potatoes would work. New potatoes are small potatoes with thin, wispy skins and a crisp, waxy texture.
  2. Sea Salt
  3. Olive Oil
  4. Grated Parmesan
  5. Freshly ground pepper

How to make the Best Potato Recipe Ever?

  1. Add potatoes to a large pot or dutch oven and cover with water until there's an inch of water above the top of the potatoes. Shake about ½ teaspoon of salt into water. Turn stove on to medium high and bring to a boil. Boil for about 12-15 minutes, until potatoes are soft when poked with a fork.
  2. Strain potatoes. Place potatoes on a rimmed baking sheet and let cool for a few minutes.
  3. Add the 4 tablespoons of olive oil to large skillet and turn to medium high heat.
  4. While potatoes are still on the baking sheet, with the heel of your hand, gently press down on the potatoes to "smash" them. You can see in the photo below that they will look like little pac mans.
  5. Place potatoes in hot skillet, and sprinkle ¾ teaspoon sea salt on top of the potatoes. Cook on medium high heat for 8 minutes, then medium heat for 5-7 minutes.
  6. Add the shredded parmesan to the pan, sprinkling over the potatoes, and toss to coat.
  7. Serve and Enjoy!
