Chipotle burritos are one of my very favorite foods to enjoy when eating out.
Sometimes, I'll have the burrito as a burrito and sometimes as a bowl. Either way, delish.
The good news is, you do not have to stick to the chicken, barbacoa or carnitas version. There's a new meat in town.....ground turkey. Yes, indeed, ground turkey actually works as well, and is super healthy and so easy to whip up at home.
For this round, I chopped up one large sweet potato, five small zucchinis, one large green pepper, and one large onion to mix with the turkey. However, the options are limitless regarding what veggies to throw into your chipotle burrito bowl or burrito. Its really whatever you have on hand.
The greek yogurt mixed in at the end really kicks the flavor up a notch and gives it that creamy taste we all know and love at Chipotle.
Tips for these Chipotle Burritos with Ground Turkey and Veggies:
- Get creative with your veggies. I'm so glad I've finally found a dish where I will actually look forward to eating sweet potatoes. They are so darn good in this recipe. Who knew that all they needed was to be mixed with yogurt, cheese, turkey and veggies?
- I used the finely shredded Mexican blend cheese. I think the finely shredded worked great and helped to maintain that creamy texture I was going for with these burritos.
- Do not forget to stir in the Greek yogurt at the end. It really adds to the flavor and texture of this dish.

Chipotle Burritos with Ground Turkey and Veggies

Ingredients
Turkey and Onion
- 1 tbsp canola oil
- ½ yellow onion, chopped
- 2 lbs ground turkey
- 1 tbsp chili powder
- 1 tbsp cumin
- 3 chipotle peppers, minced (optional)
- 1 tsp kosher salt
Veggies
- 1 tbsp canola oil
- ½ yellow onion, chopped
- 1 tbsp chili powder
- 1 tbsp cumin
- 5 cups chopped veggies (sweet potatoes, zucchinis, bell peppers etc..)
- 1 cup chicken broth
- 1 14 oz can black beans
- 1 cup shredded Mexican cheese (cheddar and monterey jack)
- 1 cup plain greek yogurt
- ¼ cup finely chopped cilantro
Instructions

Heat oil in dutch oven or large stock pot over medium high heat. Add in the turkey and onion. Add spices to turkey as it is cooking. Cook until turkey is browned and onions are softened.

Scoop mixture into bowl and set aside.

Add oil to dutch oven and pour in chopped veggies. Add spices and chicken broth, and stir. Cover pot and cook for about 7-8 minutes on medium heat, until veggies have softened over medium heat.

Add in the beans, meat, cheese, yogurt, and cilantro. Stir mixture until creamy.

For Burritos: Scoop about a ½ cup into a flour tortilla and wrap up. You can eat right away or wrap in plastic wrap and aluminum foil for freezing and enjoying on another day.
For Burrito Bowls: Scoop into bowls and enjoy. You can add a dollop of sour cream and freshly topped cilantro to the top.
