Chocolate Marshmallow Cookies

Delicious and simple recipe for Chocolate Marshmallow cookies with Ritz crackers and peanut butter.

I was looking for a sweet and salty dessert idea and came across these chocolate marshmallow cookies. They fit the bill perfectly.

With only five ingredients, they are super quick to whip up, and require no baking, only a fridge.

This is all you need to create these beauties:

  • Ritz crackers
  • Smooth peanut butter
  • Marshmallow Cream
  • Ghirardelli Dark Chocolate Melts

Tips for these chocolate marshmallow cookies:

  • After creating the Ritz sandwich (one ritz, peanut butter layer, marshmallow cream layer, one more ritz), place in the freezer for 10 minutes. This allows the peanut butter and marshmallow to harden which makes the pouring of the melted chocolate over the sandwich a cleaner/easier deal.
  • Store the cookies in the freezer in an airtight container. They taste best this way. There were a few we left in the fridge and the chocolate was a little too soft, which made the rest of the cookie a little gooey.
  • Add one tablespoon of crisco shortening to the chocolates for easier, smoother melting of the chocolates.

My family loved these cookies. I made them during a hot September week, and grabbing one of these from the freezer after school and work was the perfect snack / pick me up before the afternoon activities.

And, because the Ritz cracker has that light crunch to it, they are not as rich as it would seem, however, after one, the sweet craving is satisfied.

I can also see making these at Christmas time with red and green sprinkles or m&ms on top.

They remind me of the pinwheels we used to buy at the grocery store when I was little, except these are lighter and have the added flavor of peanut butter, which is always a good thing.

Chocolate Marshmallow Cookies

Delicious and simple recipe for Chocolate Marshmallow cookies with Ritz crackers and peanut butter.

Ingredients

  • 1 box Ritz crackers
  • 1 jar smooth peanut butter
  • 1 jar marshmallow cream
  • 1 bag Ghirardelli chocolate melts (disks)
  • 1 tbsp Crisco shortening

Instructions

  1. On a parchment paper lined cookie sheet, place 20 Ritz crackers (flat side up) in rows.

  2. Add a layer of peanut butter.

  3. Add a layer of marshmallow cream.

  4. Add another Ritz cracker, this time, flat side down.

  5. Place sandwiches in freezer for 10 minutes to harden.

  6. Meanwhile, melt the chocolate discs and crisco shortening in a microwave safe bowl or in a double boiler until smooth.

  7. Remove sandwiches from freezer and dip in melted chocolate with a large spoon.

  8. Place back on parchment paper lined cookie sheet and let sit for 15 minutes as the chocolate hardens at room temperature.

  9. Store cookies in an airtight container in the freezer.

  10. Enjoy!
