Chocolate Peanut Butter Cheesecake Bars

No bake chocolate peanut butter cheesecake bars recipe that is super easy to pull together and enjoyed by everyone.

I was remembering a delicious peanut butter pie that I enjoyed this summer during our trip to Scotland, and I just had to have a peanut butter pie STAT.

Luckily, I found the perfect recipe with these chocolate peanut butter cheesecake bars. When I say perfect, it is with good reason.

  • They are no bake - yay!
  • They are SUPER QUICK to whip up
  • Easy list of ingredients
  • Everyone in my family enjoyed them immensely
  • They are different than the main desserts on rotation in my house- nice to spice it up sometimes
  • They have an OREO crust

In my experience, most recipes involving an oreo crust are total winners. Not sure why, its just a fact.

Tips for these bars:

  • Do not skimp on the mixing time of the cream cheese and peanut butter. Mix it until it's nice and fluffy.
  • Be sure to press the oreo crust into the corners of the baking dish, so every delicious bar receives its fair share of oreo goodness.
  • 2 hours is the minimum chilling time, but 4 hours is ideal for the perfect ganache consistency. At 2 hours, the ganache is still a little soft, but still delish.

I'm so happy to share this recipe with you today, because I just know you'll love it.

And to think, it all started because of my memory of the peanut butter pie from Gloagburn Farm in Scotland. Awesome place to visit, by the way. The scenery, the people, and the fresh farm to table food, is simply out of this world. We enjoyed a fresh farm breakfast while there and enjoyed shopping in their farm shop.

The farm is located on the drive from Edinburgh to the Western highlands of Scotland. This drive is said to be one of the most beautiful drives in the world. I agree with this sentiment.

Chocolate Peanut Butter Cheesecake Bars

No bake chocolate peanut butter cheesecake bars recipe that is super easy to pull together and enjoyed by everyone.

Ingredients

  • 18 oreos, crushed
  • 3 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 2 tsp vanilla extract
  • 1 cup semi sweet chocolate chips
  • ¼ cup heavy whipping cream

Instructions

  1. Line an 8x8 pan with foil, allowing for hang over on both sides of the pan to make removing the bars easier later. 

  2. Mix together the crushed cookies with the melted butter then place in the bottom of the prepared pan and press until the bottom of the pan is evenly coated. 

  3. In an electric mixer, mix together peanut butter and cream cheese until well combined and smooth. Using a spatula, spread over the top of the oreo crust.

  4. Melt together chocolate chips and whipping cream in 30 second increments, until melted and smooth. Pour chocolate evenly over cream cheese/peanut butter layer, and spread with spatula to even out to the corners.

  5. Carefully cover, either with baking pan cover or saran wrap, and place in fridge for at least 2 hours. At 4 hours, the chocolate ganache will be just right. At 2 hours, the ganache is sitll a little soft, but, of course, still delicious. 🙂 Enjoy!
