This is such a fun dish to make. You begin with a base of garbanzo beans and chopped sweet potatoes and can then add a variety of veggies. Our favorite veggies for this dish are spinach, onions and tomatoes. And our favorite spices are in the list below.
Ingredients you will need:
- Medium size sweet potato
- Coconut Oil
- Curry powder
- Paprika
- Garam Masala
- Garbanzo Beans
- Medium size yellow onion
- Grated Ginger
- Garlic
- Coconut Milk
- 3 handfuls of fresh spinach

Easy Green Curry
Delicious Green Curry to whip up for a midweek dinner the whole family will enjoy.
Ingredients
- 1 medium size sweet potato
- 2 tbsp coconut oil
- 2 tbsp curry powder
- 1 tbsp paprika
- 1 tbsp garam masala
- 1 medium size yellow onion
- 2 cloves garlic, chopped
- 1 tsp grated ginger
- 2 cans garbanzo beans
- 16 oz can diced tomatoes
- 1 can coconut milk
- 3 handfuls of fresh spinach
Instructions

Poke holes in sweet potato with fork. Spread 2 tablespoons of coconut oil over sweet potato and microwave potato for 3 minutes.

Chop medium size onion.

Add 2 tbsp curry, 1 tbsp paprika, and 1 tbsp garam masala to Dutch oven or deep large saute pan and toast for 3 minutes.

Meanwhile, cut sweet potato into ½ inch cubes (roughly size of garbanzo beans).

Remove spices from Dutch oven and add two tbsp of coconut oil into Dutch oven.

Once coconut oil is melted, add minced onion and chopped sweet potatoes. Cook until soft about 4 minutes.

Chop up 2 cloves of garlic and a teaspoon of grated ginger. Also, in a colander drain the 2 cans of garbanzo beans and rinse with water.

Add garlic, ginger, and diced tomatoes to Dutch oven.

Add spices back into Dutch oven.

Cook for a minute on medium high heat, then add the coconut milk and garbanzo beans. Stir.

Heat up to medium high with cover on to bring to a boil.

Remove cover, stir in spinach, and simmer for 10 minutes.

Serve with fluffy jasmine rice and Enjoy!
