What a nice surprise this healthy and easy vegetarian lasagna turned out to be on a day where I was stuck with the age old question of what's for dinner?
You know how during the Christmas season, you're on a sugar overload right about now from all of the Christmas cookies and candy treats that seem to flood your life at this time? This lasagna will be a welcome respite for you. Its a healthy, warm comfort food, just what you need.
It is the first time I actually felt great after a big lasagna dinner. Usually I feel full and bloated, but with the absence of ricotta cheese and the addition of cottage cheese and ground flax meal, lasagna takes on a whole new look and feel.
Ingredients you will need:
- Olive Oil
- Minced Garlic
- Fresh Spinach
- Cottage Cheese
- Eggs
- Flax meal
- Oregano
- Italian Seasoning
- Sea Salt
- Nutmeg
- Lemon Juice
- Parmesan Cheese
- Tomato Sauce
- No Boil Oven Ready Lasagna Noodles
- Shredded Mozarella Cheese
How to Make Easy Vegetarian Lasagna Florentine?
- Preheat oven to 350 degrees
- Saute Spinach - In medium skillet, add olive oil to skillet set to medium high heat. After oil has warmed, add minced garlic and cook for 1-2 minutes. Add in 4 cups of fresh spinach and cook until just starting to wilt.
- Create the Cottage Cheese layer - Blend the cottage cheese in a food processor or blender until mostly smooth and creamy. Move the cottage cheese to a medium bowl and add in the eggs, flax meal, oregano, Italian seasoning, nutmeg, lemon juice, and parmesan cheese. Stir in the spinach and set aside.
- Assemble Lasagna - Spray a 9x13 baking dish with butter spray. Add a few spoonfuls of tomato sauce to the dish and spread around. Add 3 noodles on top, add 1 cup tomato sauce, 1 cup of the creamy spinach mixture, and ¾ cups shredded mozzarella. Repeat for 3 complete layers and end with the last 3 lasagna noodles, 1 cup of tomato sauce and 1 cup mozzarella cheese. Cover with greased foil and cook for 40 minutes.
- Remove foil and Bake for 10 more minutes to brown cheese. Remove lasagna from oven and let stand for 15 minutes before serving.

- 1 ½ tsp minced garlic
- 4 cups fresh spinach
- 2 cups cottage cheese
- 2 eggs
- ¼ cup flax meal
- 1 tsp Italian seasoning
- ¼ tsp sea salt
- pinch of nutmeg
- 1 tbsp freshly squeezed lemon juice (about ½ lemon)
- ½ cup parmesan cheese
- 4 cups tomato sauce
- 12 no boil oven ready lasagna noodles
- 4 cups shredded mozzarella cheese
