Making Cauliflower Rice

Making Cauliflower rice in the food processor or blender is super quick and easy. It's also easy to make it taste good, I promise. I'll be swapping out traditional rice for cauliflower rice more often now with this recipe.

More delicious side dishes that might tempt your palate include Sauteed Zucchinis and Onions, Easy Sauteed Spinach, Homemade Dinner Rolls, Garlic Mashed Potatoes and Twice-baked mashed potatoes.

Making Cauliflower rice delicious is actually easier than you think.

We are jasmine and brown rice fanatics. We serve many of our dishes with a side of rice including Thai Basil Chicken, Cashew Chicken, Honey Lime Salmon, and Chicken Sausage Gumbo, to name a few.

Now, that we have the ability to kick up the health content of our meals without sacrificing flavor, we will be making cauliflower rice in our mini food processor often.

By the way, our Cauliflower rice this time is yellow because our local farmers market offers multiple cauliflower colors and the yellow is always good.

You can use a blender or a food processor to create rice out of cauliflower. We prefer our mini food processor for ease of use and clean-up. You can see it in action below:

You can see in the photo above that the size you are going for with the processing of the cauliflower rice is somewhere between quinoa and white rice size.

How to Make Cauliflower Rice from Scratch?

Cut 5 large Cauliflower florets off their stems. Rinse with water to clean. Cut the cauliflower florets into small pieces (½ in to 1 inch long) and place in food processor. Process for about 45 seconds, and, voila, you're done!

How to Make Cauliflower Rice Taste Better?

After processing the cauliflower, you can saute the cauliflower rice in butter for a few minutes to brown. You can then add different flavors to create very tasty rice including the following:

  1. Turmeric
  2. Oregano
  3. Sauteed cremini mushrooms
  4. Sauteed spinach
  5. Salt and pepper
  6. Minced Garlic
  7. Cinnamon

Really the sky is the limit with flavors. Testing different spices and additions are the best way to find your family's favorite.

How to Make Cauliflower Rice in Vitamix?

You would follow the same steps from the above question, but place the florets in your Vitamix. Turn the Vitamix to high speed and mix. It should be a little longer mixing time as opposed to the processing time, but not much.

Ingredients

  • 5 large florets of Cauliflower
  • 2 tbsp butter
  • 1 tsp minced garlic

Instructions

  1. Cut cauliflower florets off from stems and chop into 1 inch pieces.

  2. Place cauliflower florets in food processor or blender and mix until about the size of halfway between a quinoa and white rice.

  3. Add butter to saute pan and turn to medium high. Saute cauliflower rice, until slightly browned. Add in minced garlic and cook for another 30 seconds.

  4. Serve with chopped fresh cilantro sprinkled on top for a delicious side dish. Enjoy!
