No Bake Chocolate Oatmeal Cookies

Easy no bake chocolate oatmeal cookies recipe that is simple to make, the kids love them, and Mom is happy it only takes one bowl.  One of our favorite desserts!

I used to make these delicious 5 minute no bake chocolate oatmeal cookies all the time. They always cure a sweet craving and they are so quick to whip up. Like 5 minutes quick.

The recipe uses one bowl, and there is no cooking involved.

The simple flavors of chocolate, peanut butter, oatmeal and chopped walnuts are just heavenly together.

We used to call these "chocolate fudgies".  I guess now that I'm making them again, we'll refer to them, once again, as chocolate fudgies.  Cute, don't you think?

Tips for these no bake chocolate oatmeal cookies:

  1. Be sure to watch the mixture as you bring it to a boil and stir occasionally.  You do not want to burn the chocolate and butter to the pot, and have to start over.  You will want these cookies to be done as quickly as possible, so you can start enjoying them.  So good.
  2. I added walnuts to the recipe, but they are just as yummy without nuts.  My family likes the added texture and nuttiness.
  3. You can really make these cookies as large or small as you'd like.  I think 2 tablespoons is a good size to shoot for, and is a size that works well for us.

These are such a classic, traditional no bake cookie.  Its really hard to go wrong with these.  They are loved by all and are so easy to make.

No Bake Chocolate Oatmeal Cookies

Ingredients

  • ½ cup unsalted butter (1 stick)
  • 2 cups granulated sugar
  • ½ cup whole milk
  • 4 tbsp unsweetened cocoa powder
  • pinch of kosher salt
  • ½ cup smooth peanut butter
  • 2 tsp vanilla extract
  • 3 cups quick cooking oats
  • ½ cup chopped walnuts

Instructions

  1. Place the first 5 ingredients into medium sized (4-6 quart) pot on stovetop.   Over medium-high heat, bring the ingredients to a rapid boil, stirring occasionally. Let boil for 1 full minute, then remove pot from the heat.

  2. Stir in peanut butter and vanilla extract until smooth, then stir in the oats and walnuts.

  3. Using a medium sized cookie scoop, drop the cookie dough onto parchment lined baking sheet.  Place in the fridge for a half hour, and they should be set.  Enjoy!
