Oh the frosting you guys, amazing. I normally do not love cream cheese frosting, but this one is different. So, so good.
The proportion of cream cheese to butter and sifted powdered sugar is perfect. There's less of a thick cream cheese taste. You can taste the butter as well, and, as usual with butter, that is a good thing.

- They are SUPER QUICK to whip up. In a matter of 10 minutes, you will have these bars in the oven. In another 30 minutes, they will be baked perfection. Cool for about an hour. Add the frosting, and, oh my goodness, pumpkin cake perfection. SO good.

- 4 Eggs
- Sugar
- Vegetable Oil
- 1 15 oz can pumpkin puree
- Vanilla Extract
- All-purpose flour
- Baking Powder
- Cinnamon
- Pumpkin Pie Spice
- Sea Salt
- Baking Soda

How to Make Pumpkin Spice Bars?
This pumpkin bar recipe with canned pumpkin is so much easier than I was anticipating. Follow these easy steps:
- Whisk wet ingredients together in a large bowl.
- Stir dry ingredients together in a medium bowl.
- Add dry ingredients to the wet ingredients, and stir, until just combined. Do not Overmix.
- Pour batter into a 13x9 baking dish (sprayed on the bottom with cooking spray). Spread the batter out with a spatula to evenly cover the pan.
- Bake for 30-35 minutes in a preheated 350-degree oven.
- Cool bars to room temperature.
- Make frosting by mixing cream cheese, butter and sifted powdered sugar together.
- Spread frosting on cooled bars.

Tips:
- Be sure to sift the powdered sugar. I honestly think this has a lot to do with the perfect texture of the frosting. It's lighter and fluffier than most cream cheese frostings.

Ingredients
Pumpkin Cake Bars
- 4 eggs
- 1 ⅔ cups granulated sugar
- 1 cup vegetable oil
- 1 15 oz can of pumpkin puree
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 2 tsp pumpkin pie spice
- 1 tsp sea salt
- 1 tsp baking soda
Cream Cheese Frosting
- 1 8 oz bar of cream cheese, softened
- 2 tbsp butter, softened
- 1 tsp vanilla extract
- 2 ½ cups sifted powdered sugar
Instructions

Preheat oven to 350 degrees. Spray the bottom of a 9x13 inch baking dish with cooking spray.
Pumpkin Cake Bars

In large mixing bowl, whisk the wet ingredients together including the eggs, sugar, oil, pumpkin puree, and vanilla extract, until combined.

In a separate medium sized bowl, whisk together the dry ingredients, including the flour, baking powder, cinnamon, pumpkin pie spice, salt and baking soda, just until combined.

Add the dry mixture into the wet mixture and stir until just combined. DO NOT OVERMIX. (It helps to fold the mixtures together)

Pour the batter into the prepared baking dish, and, using a spatula, spread the batter out evenly in the dish, smoothing the top.

Bake for 30-35 minutes, or until a toothpick inserted in the middle of the cake, comes out clean.

Transfer the dish to a wire rack and cool to room temperature.
Cream Cheese Frosting

In a stand mixer, on low speed, stir together the cream cheese, butter, and vanilla, until combined. Stir in the powdered sugar, and mix until the frosting is super smooth and creamy.

Notes:
- It is important to not overmix when you add the dry ingredients to the wet ingredients. You want the batter to be light and fluffy and overmixing will make it dense.
- Definitly sift your powdered sugar for the frosting. This makes the frosting super creamy and smooth.
