Easy and healthy sauteed spinach with olive oil, butter, chopped white onion, garlic, fresh lemon juice, and red pepper flakes. Adding to my list of delicious side dishes.
Heat oil in deep sauce pan over medium heat.
Add chopped onion and saute for 2-3 minutes until onion turns translucent.
Add garlic and stir about a minute longer until garlic is aromatic, not brown.
Add baby spinach, salt and pepper. Stir to coat spinach in oil. Continue stirring every 30 seconds until spinach is wilted, for about 4-5 minutes. Once spinach is wilted, immediately remove from heat, to avoid over cooking.
Add fresh lemon juice and red pepper flakes to spinach mix and stir. You are ready to serve. Enjoy!
