  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup light or dark brown sugar
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • ½ cup plus 2 tablespoons natural unsweetened cocoa powder
  • 1 tsp baking soda
  • tsp fine sea salt
  • 2 tbsp milk
  • 1 cup semi sweet morsels
  • cup white chocolate chips
  • ¼ cup white chocolate chips to sprinkle on top

  1. In a stand mixer, beat the butter for 1 minute on medium speed until smooth and creamy.  Add the granulated sugar and brown sugar.  Beat the butter and sugar mixture on medium high speed until flurry and light in color.

  2. Beat in the egg and vanilla on high speed, scraping down the sides as needed to make sure ingredients are fully incorporated.

  3. In a medium bowl, whisk together the flour, cocoa powder, baking soda and salt until combined.  Slowly mix the the dry ingredients into the wet ingredients until combined.

  4. Turn the speed up to high on your mixer and beat in the milk, then the semi sweet chips and white chocolate chips.

  5. Cover dough tightly with plastic wrap and place in fridge to chill for at least 3 hours.

  6. After chilling time, remove dough from fridge and let sit at room temperature for 20 minutes.

  7. Meanwhile, preheat oven to 300 degrees.  Use a cookie scoop to scoop about 2 tablespoons of dough.  Roll between hands to create round balls of dough.  Place on parchment paper lined baking sheets.

  8. Bake the cookies for approximately 10 minutes.  The centers of the cookies will look soft and this is ok.  Immediately, gently add 4-5 white chocolate chips on top of the warm cookie.  You will want to slightly push the chips into the soft spots of the cookie.

  9. After cooling for about 5 minutes, the white chocolate chips will settle into the cookie. After settling for 5 minutes, transfer cookies to a wire rack for further cooling.
