Cheesy Chicken Quesadilla Pie

Ingredients

  • 3 (10 inch) flour tortillas
  • Canola oil or butter cooking spray
  • 3 cups cooked, shredded (about 1 ½ pounds chicken)
  • 8 oz sharp cheddar cheese, shredded (2 cups)
  • 2 tbsp diced green chiles (adjust amount if you'd like more spice)
  • ½ cup minced fresh cilantro
  • salt and pepper
  • 2 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 tsp baking powder

Instructions

  1. Set your oven rack in the middle position.  Preheat the oven to 425 degrees.  

  2. Spray cooking spray on the bottom and sides of a 9 inch deep dish pie plate.

  3. Layer and overlap three tortillas, pressing them into the pie dish.  In a medium bowl. stir shredded chicken with 1 cup of cheese , minced cilantro, ½ teaspoon salt, and ½ teaspoon pepper.  Spoon the mixture into the pie dish.

  4. In the same bowl where you mixed the chicken, whisk together the eggs, milk, flour, baking powder and ½ teaspoon salt until smooth.

  5. Slowly pour this liquid mixture into pie dish, and make sure to cover the chicken mixture evenly, as you want the bread to puff up over all of the chicken pieces.  Sprinkle the top of the dish with the remaining shredded cheddar cheese.

  6. Bake for 25 minutes, until the top surface is golden brown.

  7. Let the pie sit for 5-10 minutes before serving.
