Rocky road brownies recipe filled with freshly chopped walnuts, marshmallows, and semi sweet chocolate chips. Homemade rocky road is such an unbelievably delicious treat!
Preheat oven to 350 degrees. Spray a 9x9 inch pan.
Over medium heat, melt butter in saucepan. Stir in sugar and milk. Bring to a boil, then remove from heat.
Add in the chocolate chips and vanilla. Stir, until smooth. Beat in eggs, one at a time with a whisk or handheld mixer.
Sift together flour, baking soda and salt and add to mixture. Stir in walnuts and mix until well blended.
Pour mixture into prepared pan. Bake for 22-25 minutes, until toothpick comes out of center of brownies almost clean. Immediately cover the top of brownies with mini marshmallows, and press down slightly. Cool brownies in pan for about an hour.
In a double boiler, melt chocolate chips and shortening over hot water (not boiling). Stir until smooth. Pour chocolate over top of brownies an spread to cover with spatula. You can sprinkle top with walnuts, if you'd like.
Chill in refrigerator for about two hours, covered with plastic wrap.
