Double chocolate chip brownies made from scratch are one of the best treats around. This recipe includes a delicious fluffy chocolate frosting.
Preheat oven to 350 degrees. Line an 8x8 inch pan with parchment paper, so that there is overhang over the edges. This will provide handles for easier removal of brownies after cooling. Lightly grease the paper.
In large, microwaveable bowl, combine chopped unsweetened chocolate and butter. Place in microwave and cook in 40 second increments until mixture is smooth after stirring. This only took about 1 minute and 20 seconds for us.
Whisk in the sugar and brown sugar, until smooth. Whisk in eggs and vanilla. With a rubber spatula, fold in dry ingredients (flour, baking powder and salt) to mixture, until combined. Stir in chocolate chips.
Pour batter into prepared pan and place in preheated oven. Cook for 25-30 minutes, until a toothpick inserted in the center comes out clean or with just a few moist crumbs. Cool in pan for an hour. Remove with paper handles and place on wire rack for further cooling.
In a stand mixer, cream together butter, cocoa powder. and salt on medium speed for 2-3 minutes. Scrape sides of bowl with rubber spatula. Turn mixer to low speed and add in the powdered sugar, mix until incorporated. Add in the vanilla and milk. Mix on medium speed, until frosting is smooth and fluffy. You can adjust the milk or cream to bring the frosting to your desired consistency.
Frost brownies once they have completely cooled. Enjoy!
