Sauteed Zucchini and Onions with Butter, Garlic, Spring Onions and lemon juice are the perfect side for your meat and fish dinners. So refreshingly delicious and healthy!
In a large, wide saute pan, add butter and turn stovetop to medium heat.
After butter has melted, swirl around the pan, and add in the zucchinis and onions. Cook for 3-5 minutes, stirring occasionally, until lightly browned on all sides of veggies.
Add in garlic in separate area of the pan and cook for 20-30 seconds, until aromatic. Mix garlic in with the rest of the veggies.
Remove from heat. Squeeze fresh lemon juice all over veggies. Optional: Top with chopped spring onions or freshly shredded parmesan or mozzarella cheese. Enjoy!
