Sauteed Zucchini and Onions

Sauteed Zucchini and Onions with Butter, Garlic, Spring Onions and lemon juice are the perfect side for your meat and fish dinners. So refreshingly delicious and healthy!

  • 1 tbsp butter
  • 2 medium-sized zucchinis
  • 1 medium-sized yellow onion
  • 1 tbsp minced garlic
  • 1 tsp fresh lemon juice
  • chopped spring onions (optional)
  • freshly shredded parmesan or mozzarella cheese (optional)


  1. In a large, wide saute pan, add butter and turn stovetop to medium heat.

  2. After butter has melted, swirl around the pan, and add in the zucchinis and onions. Cook for 3-5 minutes, stirring occasionally, until lightly browned on all sides of veggies.

  3. Add in garlic in separate area of the pan and cook for 20-30 seconds, until aromatic. Mix garlic in with the rest of the veggies.

  4. Remove from heat. Squeeze fresh lemon juice all over veggies. Optional: Top with chopped spring onions or freshly shredded parmesan or mozzarella cheese. Enjoy!
