Easy Blackberry Cobbler recipe that is quick and simple to whip up. This recipe has a perfectly flaky homemade pie crust that is easy to make and delicious!
Preheat oven to 375 degrees.
In a medium bowl, mix the flour and salt together.
Add the shortening to the dry ingredients and cut in with a fork, working into the dry ingredients, until the dough is in pea-sized pieces.
Add cold water to the dough, one tablespoon at a time, until the dough begins to come together, when you pat it into a ball. It should be a little dry.
Add dough ball to a floured surface and roll out to a ¼ inch thick piece of dough.
Mix the berries, sugar and flour gently together in a small bowl.
Cut the dough to an 8x8 piece and place it on bottom of lightly greased 8x8 baking pan.
Pour berry mixture on top of the dough. Cut the remaining dough into 8-inch pieces and place in criss-cross pattern on top of berries. (4-inch pieces put together are fine too - does not have to be perfect). Sprinkle the top of the criss-cross dough with sugar.
Bake for 25-30 minutes in preheated oven.
Remove from oven and eat immediately, or cool and enjoy later.
