Pumpkin Spice Bars

Easy Pumpkin Spice Bars Recipe with deliciously smooth cream cheese frosting. This is so quick to make and unbelievably good.

Ingredients

Pumpkin Cake Bars

  • 4 eggs
  • 1 ⅔ cups granulated sugar
  • 1 cup vegetable oil
  • 1 15 oz can of pumpkin puree
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 2 tsp pumpkin pie spice
  • 1 tsp sea salt
  • 1 tsp baking soda

Cream Cheese Frosting

  • 1 8 oz bar of cream cheese, softened
  • 2 tbsp butter, softened
  • 1 tsp vanilla extract
  • 2 ½ cups sifted powdered sugar

Instructions

  1. Preheat oven to 350 degrees. Spray the bottom of a 9x13 inch baking dish with cooking spray.

Pumpkin Cake Bars

  1. In large mixing bowl, whisk the wet ingredients together including the eggs, sugar, oil, pumpkin puree, and vanilla extract, until combined.

  2. In a separate medium sized bowl, whisk together the dry ingredients, including the flour, baking powder, cinnamon, pumpkin pie spice, salt and baking soda, just until combined.

  3. Add the dry mixture into the wet mixture and stir until just combined. DO NOT OVERMIX. (It helps to fold the mixtures together)

  4. Pour the batter into the prepared baking dish, and, using a spatula, spread the batter out evenly in the dish, smoothing the top.

  5. Bake for 30-35 minutes, or until a toothpick inserted in the middle of the cake, comes out clean.

  6. Transfer the dish to a wire rack and cool to room temperature.

Cream Cheese Frosting

  1. In a stand mixer, on low speed, stir together the cream cheese, butter, and vanilla, until combined. Stir in the powdered sugar, and mix until the frosting is super smooth and creamy.

  2. Spread the delicious frosting on the cooled cake, and you are all set to slice up delicious pumpkin spice bars. Enjoy!

Recipe Notes

Notes:

  1.  It is important to not overmix when you add the dry ingredients to the wet ingredients.  You want the batter to be light and fluffy and overmixing will make it dense.
  2. Definitly sift your powdered sugar for the frosting.  This makes the frosting super creamy and smooth.
