Prep Time 20 minutes
Servings 8

  • 1 lb Orecchiete pasta
  • 5 tbsp olive oil, divided
  • 1 lb mild, sweet or spicy Italian sausage, removed from casings
  • 3 garlic cloves, minced
  • 1 cup chicken broth
  • 1 lb broccoli florets
  • ½ tsp sea salt
  • ¼ tsp red pepper flakes
  • 3 tbsp unsalted butter
  • ½ cup freshly grated Pecorino Romano cheese

  1. Bring a large pot of salted water to a boil and cook pasta according to package instructions.

  2. While pasta is cooking, heat a large skillet over medium high heat and add 1 tbsp of olive oil. Crumble sausage into skillet and cook until browned for about 5 minutes. Reduce the heat to medium and add the minced garlic, cooking for 1 more minute.

  3. Once garlic has cooked for a minute, add the remaining 4 tbsp olive oil, chicken broth, broccoli, salt and red pepper flakes. Cook, stirring frequently and scraping bottom of pan to release brown bits, until the broccoli florest are tender and crisp for about 5 minutes.

  4. Stir in the butter, until melted and simmer for a few minutes to reduce and concentrate the sauce.

  5. Drain the pasta well, and place back into the pasta pot. Add the sausage broccoli mixture, with half of the romano cheese and toss to blend. Serve pasta with a sprinkling of the remaining romano cheese. Enjoy!
