Chicken Broccoli Casserole

Ingredients

  • 1 large head of broccoli (4 cups of bite size florets)
  • 2 tbsp butter
  • 8 oz uncooked pasta
  • 1 medium yellow onion, chopped
  • 8 oz sliced cremini mushrooms
  • 4 garlic cloves, minced
  • 1 cup chicken stock or vegetable broth
  • 3 tbsp flour
  • 1 ½ cups milk
  • 1 tsp dijon mustard
  • ½ tsp sea salt
  • ¼ tsp freshly ground pepper
  • 2 cups freshly shredded sharp cheddar cheese
  • 2 cups diced cooked chicken

Instructions

  1. Preheat oven to 400 degrees.

  2. In large stock pot or dutch oven, cook pasta. At 5 minutes before it is al dente, add in broccoli florets to cook with pasta. Drain pasta and broccoli in a strainer and set aside.

  3. In the same pot, heat the butter and cook the chopped onions for 5 minutes, until they are browned. Add mushrooms and minced garlic and cook for 5 more minutes.

  4. Sprinkle flour over onion/mushroom mixture and stir for 1 minute to help removed any clumps of flour. Add in chicken or vegetable stock and stir to dissolve any clumps that form.

  5. Add in the milk, dijon mustard, salt and pepper. Bring the mixture to a simmer. Remove from heat.

  6. Stir in one cup of shredded cheddar cheese. Add more pepper and/or salt if needed.

  7. Add pasta, broccoli, and onion/mushroom mixture to a 13x9 baking dish and stir so that the ingredients are all fully incorporated.

  8. Place in preheated oven and bake for 15 minutes uncovered. Sprinkle remaining cheese (1 cup) on top of casserole and bake for additional 10 minutes uncovered.
