Easy Vegetarian Lasagna Florentine

This Easy Vegetarian Lasagna Florentine is so simple to whip up for a midweek dinner and is loved by all. The fresh ingredients including cottage cheese, freshly squeezed lemon juice, and spinach create a healthier version of a traditional lasagna.

  • 1 tbsp olive oil
  • 1 ½ tsp minced garlic
  • 4 cups fresh spinach
  • 2 cups cottage cheese
  • 2 eggs
  • ¼ cup flax meal
  • 1 tsp Italian seasoning
  • ¼ tsp sea salt
  • pinch of nutmeg
  • 1 tbsp freshly squeezed lemon juice (about ½ lemon)
  • ½ cup parmesan cheese
  • 4 cups tomato sauce
  • 12 no boil oven ready lasagna noodles
  • 4 cups shredded mozzarella cheese


  1. Preheat oven to 350 degrees.

  2. Saute Spinach - In medium skillet, add olive oil to skillet set to medium high heat. After oil has warmed, add minced garlic and cook for 1-2 minutes. Add in 4 cups of fresh spinach and cook until just starting to wilt. 

  3. Create the Cottage Cheese layer - Blend the cottage cheese in a food processor or blender until mostly smooth and creamy. Move the cottage cheese to a medium bowl and add in the eggs, flax meal, oregano, Italian seasoning, nutmeg, lemon juice, and parmesan cheese. Stir in the spinach and set aside.

  4. Assemble Lasagna - Spray a 9x13 baking dish with butter spray. Add a few spoonfuls of tomato sauce to the dish and spread around. Add 3 noodles on top, add 1 cup tomato sauce, 1 cup of the creamy spinach mixture, and ¾ cups shredded mozzarella. Repeat for 3 complete layers and end with a last 3 lasagna noodles, 1 cup of tomato sauce and 1 cup mozzarella cheese. Cover with greased foil and cook for 40 minutes.

  5. Remove foil and Bake for 10 more minutes to brown cheese. Remove lasagna from oven and let stand for 15 minutes before serving.

  6. Serve and Enjoy!
