Ingredients

Tomato Cucumber Salsa

  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 2 large tomatoes, diced
  • 1 English cucumber, diced
  • ½ cup red onion, diced
  • kosher salt and fresh ground pepper

Tzatziki Sauce

  • 1 English cucumber
  • 1 cup plain Greek yogurt
  • ½ cup crumbled feta cheese
  • 1 tsp minced garlic
  • kosher salt and fresh ground pepper to taste
  • optional: chopped mint or parsley

Meat

  • 1 tbsp olive oil
  • ½ cup chopped red onion
  • 2 lbs ground turkey
  • 1 tsp kosher salt
  • 1 tsp fresh ground pepper
  • 4 tsp minced garlic
  • 2 tsp dried oregano
  • ½ cup tomato sauce
  • ¼ cup chicken broth
  • 6-8 pita bread or soft flour tortillas (taco size)

Instructions

Tomato Cucumber Salsa

  1. Toss the olive oil, red wine vinegar, tomatoes, cucumbers and onions in a bowl and sprinkle with salt and pepper.  Cover bowl and refrigerate for at least an hour or up to 24 hours, to let the flavors mingle.

Tzatziki Sauce

  1. Using a box grater, shred the cucumber on the largest hole side of the grater.  Place cucumber pieces in strainer, and sprinkle with salt.  Let sit for 20 minutes, then using paper towels press and squeeze out the excess water on the cucumbers.

  2. Place cucumbers in a bowl and add in greek yogurt, feta cheese, garlic, salt and pepper, and any optional herbs you'd like to add.  Stir ingredients together, cover bowl, and place in refrigerator until ready to use.

Meat

  1. Add olive oil to skillet on medium high heat.  Add in red onions and saute for two minutes, add in the turkey, and cook until almost cooked through, breaking up turkey with wooden spoon as you cook.  Add in garlic and cook turkey until cooked through

  2. Stir in tomato sauce, chicken broth, and oregano.  Bring mixture to a boil, then reduce heat to a simmer for 6-8 minutes.

  3. Serve with pita, side of rice or hummus.  Enjoy!!
