Taco casserole bake with ground beef that is super easy to pull together for a quick homemade dinner.

I love whipping up quick casserole dishes like this one for midweek dinners.  A few more of my favorite casserole dinners include Ground Beef Enchilada Recipe, Cheesy Quesadilla Pie, and Easy Beef Enchilada Casserole

I wanted a super quick taco casserole recipe to cook for the fam.

I wanted the casserole to include 1 pound of ground beef, and the usual suspects, like beans, tomatoes, salsa, lettuce, and cheese.

This taco casserole is it.

You add the ingredients to an 8x8 pan, sprinkle with cheese, and cook in the oven, just until the cheese is melted.

Simple. Quick.  Tasty.

I love my tamale pie casserole recipe, but when I'm in the mood for crunchy chips, this taco casserole is perfect.

This dish reminds me of a taco casserole with fritos that my Mom used to make for us growing up.  I love the mixture of crunchy chips with the meat, veggies and cheese.

Tips for this easy taco casserole:

  1. Remember to drain the pan after cooking the ground beef, before the taco seasoning step.  The first time I made this casserole, I forgot to drain, and, while still delicious, was a little too juicy.
  2. If you prefer, you can choose to not put the chips on the bottom of the dish, and use them to scoop up your bites of this delicious casserole.
  3. You can use ground turkey instead of ground beef if you'd like.
  4. Instead of the taco seasoning packet, you can try my Homemade Taco Seasoning.

I love layered taco bake type dinners, and this one will be my go to when we would like dinner on the table in 20 minutes or less.

Delicious Taco Casserole

Taco casserole bake with ground beef that is super easy to pull together for a quick homemade dinner.

Ingredients

  • 1 lb grass fed ground beef
  • 1 package (1 ¼oz) taco seasoning (mild or spicy)
  • 1 can refried beans (15 oz)
  • 2 cups monterey jack/cheddar cheese, divided
  • 1 cup fresh salsa, mild
  • 3 green onions, chopped
  • 1 can(2 ⅓ oz) sliced black olives
  • 2 tomatoes, chopped
  • 2 cups tortilla chips or corn chips

Instructions

  1. Preheat oven to 375 degrees.

  2. Brown ground beef, then drain.  In same pan, add the taco seasoning packet.  Pour in ¾ cup water.  Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally.

  3. Place tortilla chips at the bottom of an 8x8 pan.

  4. Cook refried beans in medium size pot over medium heat, until hot.  Stir in cheese and salsa, until combined.

  5. Pour bean mixture on top of chips.

  6. Scoop ground beef on top of bean mixture.  Sprinkle remaining 1 cup of cheese on top of meat.

  7. Sprinkle sliced olives and spring onions on top of cheese.

  8. Bake in oven, until cheese is melted, about 5-10 minutes.

  9. Sprinkle chopped tomatoes on top and serve.  Enjoy!!
