You guys, these chocolate chip cheesecake bars are absolutely one of the best sweet treats around to curb your sweet craving. SO delicious.
Typically, you would think that anything with both cheesecake and chocolate chip cookie dough would be too dense, rich, and greasy. Not the case here AT ALL.
These delectable bars are soft, and fluffy with just the right amount of sweetness. And, they are SO EASY to whip up.
Tips for these Chocolate chip cheesecake bars with Nestle tollhouse chips:
- Whenever I make any dessert involving chocolate chips, I turn to Nestle tollhouse chocolate chips. The results with tollhouse always turn out the best, in comparison with other chips.
- When placing the chunks of cookie dough on top of the cheesecake filling, do not worry if it looks messy. Just spoon out chunks of dough and place all over the top. You'll see the cheesecake peeking through the chunks of dough. When it cooks up, this combo is heavenly, as you may have already guessed.
- Yes, you will have to cook the bars for the full 40 minutes. Cheesecake takes a bit longer to cook up than your typical cookie or brownie. The 40 minute mark was perfect for us.
- If you double the recipe, you can make these chocolate chip cheesecake bars in a 9x13 baking pan.
These chocolate chip cheesecake bars will, undoubtedly, be on heavy rotation for my family.

Chocolate Chip Cheesecake Bars
Ingredients
Chocolate chip cookies
- 2 cups all purpose flour
- ½ tsp baking soda
- ½ tsp kosher salt
- ⅔ cup butter, softened
- ½ cup sugar
- ⅔ cup brown sugar
- 1 egg
- 2 tsp vanilla
- 2 cups chocolate chips
Filling
- 8 oz cream cheese
- ½ cup sugar
- 1 egg
- 1 tsp vanilla
Instructions
Chocolate Chip Cookies

Preheat oven to 350 degrees. Line a 9x9 baking pan with parchment paper and spray with nonstick spray.

In a medium bowl, whisk together flour, baking soda and salt. Set aside. In a stand mixer, on medium-high speed, cream together butter, sugar and brown sugar until fluffy and light in color. Add egg and vanilla and mix to combine.

Turn mixer to low, and slowly add in dry flour mixture. Mix until combined. Add in chocolate chips and mix on low speed, until combined. Do not overmix.

Press ⅔ of chocolate chip cookie mixture in bottom of prepared pan.
Filling

In stand mixer, mix together the filling ingredients (cream cheese, sugar, egg, vanilla) until well incorporated.

Pour all of filling on top of chocolate chip cookie mixture. Place remaining chocolate chip cookie dough in chunks over the top of filling mixture. Cover evenly.

Bake in preheated oven for approximately 40 minutes or until cheesecake is fully cooked and chocolate chip cookie crust is browned. Cool completely, then chill in your fridge. SO GOOD! Enjoy!
