Peanut Butter Cookies with Honey Roasted Peanuts

This homemade soft peanut butter cookies recipe with honey roasted peanuts is unbelievably delicious. They smell incredible baking in the oven. I added chocolate chips to the dough - definitely the right decision.

I have now made these peanut butter cookies twice in the past three days.  They disappeared so quickly on Monday, there were multiple requests to make them again this week.

These cookies are sooo good.

I love the use of honey roasted peanuts combined with smooth peanut butter.

They really add a unique flavor to what you typically expect from a traditional peanut butter cookie.

The top of the cookies are crispy, the inside is soft and chewy, and the chocolate chips add a delicious pop of chocolate throughout.

These soft peanut butter cookies with honey roasted peanuts are such a delicious treat to share with friends and family, and the good news is, they are super easy to whip up.

If you prefer peanut butter cookies with no brown sugar, these are perfect for you as only granulated white sugar is included.

I have very few recipes that involve a food processor on this blog because I like to keep things simple, but there are some instances where you just can't get around it.  I use the processor when the results are WORTH the extra effort.  I can tell you, process the honey roasted peanuts for the amazing flavor you gain in these cookies is worth it.

Peanut Butter Cookies with Honey Roasted Peanuts

Ingredients

  • 1 cup all-purpose flour
  • 1 ¼ cup honey roasted peanuts
  • ½ cup unsalted butter (1 stick), softened
  • 1 ¼ cup smooth peanut butter
  • ½ cup sugar
  • ¾ tsp kosher salt
  • ¾ tsp baking soda
  • ½ tsp baking powder
  • 2 tsp vanilla extract
  • 1 large egg, beaten
  • 3 tbsp milk (whole or 2%)
  • 1 cup semi sweet chocolate chips

Instructions

  1. Place oven rack in center of the oven.  Preheat oven to 350 degrees.  Line baking pan with parchment paper.

  2. Add flour and peanuts to food processor.  Pulse for 30-45 seconds, until finely ground to create peanut flour.

  3. Add butter, peanut butter, sugar, salt, baking soda, baking powder, and vanilla extract to stand mixer.  Mix on low to moisten, then turn to medium and mix for 3 minutes, until soft and light.

  4. Turn mixer to low and add half of the beaten egg.  Mix until incorporated, then add the rest of the beaten egg, and mix until incorporated.  Scrape bowl with spatula.

  5. Turn mixer to low.  Add peanut flour and milk to stand mixer bowl, and mix on low to form a soft dough (about 2 minutes).  Pour in chocolate chips (if desired) and mix just until combined.

  6. Scoop out dough balls with 2 tbsp size cookie scooper and place on prepared baking sheets.

  7. Cook in preheated oven for 14-16 minutes, until tops and edges are slightly browned, but still puffy in the middle.  Let cookies sit on baking sheets for 10 minutes, then move to wire rack for further cooling.  Enjoy!!
