Coconut Crusted Tofu

This healthy coconut crusted tofu dish is SO delicious. The marinade includes a perfect mix of flavors including fresh lime juice, garlic, white miso, and ginger. The panko breadcrumb topping is to die for.

This Coconut Crusted Tofu Recipe is so amazingly delicious and so easy to throw together for dinner or lunch.

If you've been following me recently, you know how much I've been loving creating new tofu dishes for my family. I did not know how tasty tofu could be and am so happy to have another way to eat protein for dinner other than the usual suspects of fish, chicken and beef.

Ingredients for the Marinade include:

  1. White Miso
  2. Rice Wine Vinegar
  3. Soy Sauce
  4. Freshly squeezed lime juice
  5. Sesame Oil
  6. Chopped Ginger and Garlic
  7. Peanut Dipping Sauce - I recommend this one.

Ingredients for breadcrumb mixture to top tofu with after marinating:

  1. Corn Starch
  2. Shredded Coconut
  3. Panko Breadcrumbs

The flavors in this coconut crusted tofu are unique and work so well together. Served with Peanut Dipping Sauce, this dish is definitely a winner.

We served our dish with a side of fresh greens from our Sunday Farmers Market, but you could also add rice in as side or sauteed veggies.

Coconut Crusted Tofu

This healthy coconut crusted tofu dish is SO delicious. The marinade includes a perfect mix of flavors including fresh lime juice, garlic, white miso, and ginger. The panko breadcrumb topping is to die for.

Ingredients

Tofu and Marinade

  • 16 oz tofu extra firm
  • 1 tbsp white miso
  • 1 tbsp rice wine vinegar
  • 3 tbsp soy sauce
  • 1 lime, juiced
  • 1 tsp sesame oil
  • 2 tsp fresh ginger, minced
  • 2 garlic cloves, chopped
  • hot sauce, to taste

Breading Mixture

  • ¼ cup corn starch
  • ½ cup shredded coconut
  • ¼ cup panko breadcrumbs

Dipping Sauce

  • Peanut Dipping Sauce

Instructions

  1. Preheat oven to 400 degrees.

Marinate Tofu

  1. Mix together the miso, rice wine vinegar, soy sauce, sesame oil, garlic, and ginger. Add a few drops of hot sauce or sriracha sauce to desired spiciness.

  2. Cut tofu into pieces and place in container with a lid. (I used a 8x8 glass pyrex dish with a lid). Pour marinade over tofu and place in fridge for 20 minutes. At 10 minutes, turn dish over to ensure the tofu pieces are fully coated with the marinade.

Add breading topping to tofu

  1. Mix the corn starch, shredded coconut, and panko breadcrumbs to create breading topping.

  2. Place each tofu piece in breading mixture and roll over until fully covered.

Cook Tofu

  1. Place tofu pieces on parchment paper lined baking pan. Place pan in oven to cook for 20 minutes, or until slightly browned. Turn the tofu pieces over with a large spatula at the halfway point.

  2. Serve coconut crusted tofu with peanut dipping sauce. So, so good. Enjoy!
